Unlike most bacteria, Listeria can survive freezing and grow in a refrigerator. It is nearly impossible to eradicate from food processing facilities because it is so common in the environment, but steps can be taken to prevent outbreaks.
Healthy adults usually have only a short-term illness, but infections can be deadly — especially in young children, older adults, and people with weakened immune systems. Pregnant women can have a miscarriage or stillbirth.
The symptoms of infection may not appear for up to 70 days. It is very common for the bacteria to invade the central nervous system and cause meningitis. The symptoms of listeriosis include:
- Fever
- Fatigue or weakness
- Muscle aches
- Stiff neck
- Confusion
- Loss of balance
- Convulsions
